Living Life the Only Way I Know How....

Slo Carb Recipe Suggestions From Around the Web

As you will come to find out, I have been on the Slo Carb Diet as found in the 4 Hour Body by Timothy Ferriss for the last 6 months.  While I have not been the most vigilant follower, I have been able to lose and keep off 15 pounds as of today.  This is all by only adjusting what I eat... not counting calories, not working out any more that I was before (minimally), and by taking full advantage of the weekly cheat day.

That said, the hardest thing to do is find really good recipes that deliver taste on top of the need to be sugar, fruit, dairy and flour free. Tim did create a book called The 4 Hour Chef which did help but did not have enough that I could work with every day, day in and day out.

I will use this page to collect some of the best recipes I am finding to help with anyone else taking the Slo Carb plunge.  Send me your favorite recipes and I will add them here!

Breakfast

Warm Lentil Fried Egg Salad: I was NOT a "bean" or lentil person before Tim required this as a part of a good start to the day.

Scrambled Egg Muffins:  This is another great way to get your protein in, even if you are running out the door in the morning to get to work... make ahead, keep in the fridge and reheat.  I recommend you eliminate the cheese (to keep the diet clean) but can sub avacado.... this is a great alternative to still get the creamy texture.

Side Dishes

Mexican Black Beans: These are the most delicious black beans I have ever had.... use wine instead of cidar vinagar if available.  Can sub Adobo for the packet of Sazon Goya with excellent results.  Pair with fresh cut avacado (or guac) and some chicken or steak or seasoned ground beef...yum!

Ciambotta/Italian Vegatable Stew: I was introduced to this dish by a neighbor that lets this simmer for the day much like an italian gravy... so flavorful!  Not sure that this does his justice, but delicious all the same... feel free to experiment off this base

The Perfect Spinach Salad: From Ree Drummond (The Pioneer Woman +The Pioneer Woman  on the Food Network +The Food Network ) who cooks up hearty dishes for her Ranching family.  This can be a great lunch main course or a good side dish.

Main Dishes

Mussels in White Wine Sauce: Eliminating the bread may seem sacrilege (especially to a bread lover like myself)... I recommend steaming some cauliflower and throwing it into the sauce after you finish the mussels.  That way you get to enjoy all of that amazing flavor and the dish is much heartier.

Salmon with Snap Peas, Yellow Peppers & Dill-Pistachio Pistou: This is a wonderful main dish, easy to make, and fantastic if you just came back from an Alaskan fishing trip over the summer with 40 lbs of salmon I like did.

Sausage, Peppers & Onions: With a husband from Boston, this was a must have for big Sunday games... I omit the roll, and add additional Spicy Italian Sausages for more zest.  Goes GREAT with your end of day wine too!

Pan Grilled Flank Steak:  A weekly rotating recipe at my house, paired with some great asparagus or green beans, or both.

Sunset Magazines Dry Cured Roasted Turkey: I believe I came across this recipe first over 10 years ago in the pages of the west coast magazine, Sunset Magazine +Sunset Magazine .  This really easy, really flavorful recipe has been a yearly staple at my Thanksgivings ever since... beating out old family recipes.  But why wait until Thanksgiving... you just need 3 days to cure.
